It’s called deveining…

PD, PND, peeled & deveined.

A deveined shrimp. Here you wou would say that the vein is being eliminated from the shrimp. Undeveined is also an option when you purchase shrimp.
In that case you’ll see a darker line in the back of a shrimp. And it assures that it has “received” a proper diet.

A proper diet? What does a vein have to do with a shrimp’s diet?
Indeed. It is actually not a vein but that dark line in the back of a shrimp is its digestive tract.

As it doesn’t really look tasty and appealing, the majority buys “deveined shrimp”. Especially when it concerns large shrimps. Not just because of the looks, but from time to time, depending on what the shrimp has recently consumed, it impacts the taste as well.

Safe to eat?
Should you worry?
Not at all, it’s completely safe to eat.

Accidentally bought undeveined shrimp but really would like to have that black line out of its back? Here’s a clear instruction of how to do that:

  1. Make a shallow cut on the back of the shrimp
  2. Easily lift up and take out the vein with the top of a knife or a toothpick
